We are thrilled to announce that our partnership with the Fairmont Miramar Hotel in Santa Monica has been featured on Spectrum News 1! The coverage is well deserved. Not only has the Fairmont Miramar been willing to be at the leading edge when it comes to food waste processing, they also continuously work with us to improve and innovate to reduce their entire waste stream.

Over the last few months, Dyrt’s on-site in-vessel aerobic composter has been hard at work, processing thousands of pounds of food waste and eliminating over 20 metric tons of CO2 emission equivalents and counting. The unit takes in not only food scraps from the hotel’s restaurants, but also compostable napkins, cups, and plates, and turns it into nutrient-rich compost. This compost is then used to enrich the hotel’s rooftop gardens, which are set to open later this Spring.

The head chef at the Fairmont Miramar hotel adds organic waste to a green plastic bin, that will be added to the hotel's on-site composting machine.

The partnership comes in response to California’s SB 1383 bill, which mandates a significant reduction in organic waste sent to landfills by 2025. In alignment with this law, and the broader goal of reducing greenhouse gas emissions, our collaboration serves as a model for how businesses can effectively manage food waste, save money, and contribute to a healthier planet.

We are immensely proud of what we’ve accomplished together with the Fairmont Miramar Hotel and are excited about the potential of our technology to make a difference in the food industry. Stay tuned for more updates as we continue to expand our reach and bring innovative solutions to tackle food waste across LA County and beyond.
